I've been told the hairy scary spiders are harmless and to be weary of the smooth and shiny...true?

A wolf spider. Most likely Hogna lenta.
Like most spiders, if you work at it, you can provoke them to bite and can sting pretty good.
Not medically signifificant though.
You have both of the two dangerous spiders in Tenn. The female black widow and the brown recluse. Of all reported bites, only about 20% may need medical intervention.
I call all the other spiders ‘nothing bites’ like ant or bee stings.
You have southern house spiders, and they, like a number of others, simply don’t bite.
